Chicken Burritos

Instead of going out and buying chicken burritos at one of the national fast-casual restaurant chains, how about making them yourself and saving lots of money. By the time that you drive back and forth from the restaurant and wait in line to order, especially if it is during the lunch or dinner rush, which can be painfully slow sometimes, you are probably going to spend one hour minimum. Your potential savings are over $25.00 for this one meal. If you do this once a month, you can save your family over $300 a year. You can add lettuce, corn or even guacamole. This is a custom burrito that you can make any way that you like.

Chicken, rice and vegetables

This meal is one of our favorites because it is so easy to prepare. A whole roasted chicken, white rice with chicken gravy and a green vegetable. We rotate between salad, broccoli, spinach and green beans. You can also substitute a pasta for the rice for additional variety.

Chicken Caesar Salad

One of the things that we like to do when roasting a chicken is to buy one that is bigger than we need for the first meal so that we will purposefully have some leftover chicken. You can use this leftover chicken to then make a Caesar Salad for the next day. The chicken still tastes delicious and this is one of the easiest and fastest meals to prepare. It also works great for taking a healthy lunch to work.

What can you say about chicken nachos other than - YES PLEASE!!!! If you are looking for a snack that tastes great and will also fill you up, this is a keeper. A classic for watching any type of sports. Feel free to add refried beans and guacamole, if you like. One warning though - you better have enough chicken for a second serving, because the first one is never enough. 

Chicken Bacon Lettuce Wrap

A chicken bacon lettuce wrap is another easy meal to make that the whole family will love. We like to use Caesar dressing but you can use ranch dressing, if you prefer. This is a great choice for lunch, because it won't weigh you down for the afternoon. Sometimes a really heavy lunch just makes you feel lethargic like you need to take a nap. If you want to add a little more flavor, think about including avocado. When making a wrap or a burrito, feel free to add whatever ingredients are your favorites.

Chicken and Bacon Pasta with Spinach and Tomatoes in Garlic Cream Sauce

Here is a dinner idea that really hits the spot! The combination of flavors in this meal will make you feel like you are eating in a five star restaurant, without spending $100. The garlic cream sauce is nice and light, so the meal doesn't weigh you down like some heavy cream sauces can do. A nice glass of cabernet sauvignon pairs really well with this pasta and completes the meal.
