Cooking Tips
For best results consider the following suggestions -
· Use a roasting pan with a rack or a broiler pan. The better the airflow is around the bird, the more effective the PoultryMate will be. See the pictures below.
· All ovens vary in performance, so your cooking times may be slightly different than the estimated cooking times. You may need to adjust your cooking times based on your oven’s performance.
· DO NOT use aluminum foil on the bottom of the oven or the bottom of the roasting pan. Aluminum foil acts as an insulator and will reduce the temperature in the oven, thus decreasing the effectiveness of the PoultryMate and increasing your cooking time.
· DO NOT use a disposable, shiny aluminum roasting pan. It will not heat up properly, thus increasing your cooking time.
· If you like a crisp, golden brown outer skin on your bird, pat dry the entire outer skin with paper towels before placing it in the oven. Also, consider rubbing cooking oil over the outside of the bird before placing it in the oven.
· For an even crispier outer skin, you can increase the amount of time that you have the oven at 450 degrees. However, you need to reduce the amount of time for the second temperature the same so the total cooking time has not changed.
o Example 1 – for a 5 lb. chicken, the time at 375 degrees would be 35 minutes, so if you increase the time at 450 degrees to 30 minutes, you must reduce the time at 375 degrees to 25 minutes
o Example 2 – for a 15 lb. turkey, the time at 350 degrees would be 98 minutes, so if you increase the time at 450 degrees to 30 minutes, you must reduce the time at 350 degrees to 88 minutes

- 20 minutes at 450 + 98 minutes at 350 = 30 minutes at 450 + 88 minutes at 350 – In both cases, the total cooking time is 118 minutes
A shallow roasting pan with a rack allows maximum airflow around the turkey. It is okay if the PoultryMate extends past the ends of the roasting pan.
Placing the chicken on a broiler pan also works well when using a PoultryMate.
